Sour Cream and Sauerkraut Soup

A classic of Ukrainian cuisine, shchi s kyseloy pyerkhvoy is a soup warmed by the intense taste of beets and onions.

Ingredients
- 400g of beets
- 200g of carrots
- 200g of onions
- 100g of zucchini
- 500ml of beef broth
- 100g of sauerkraut
- 30g of butter
- 1 tablespoon of white wine vinegar
- Salt and pepper to taste
- 2 tablespoons of sour cream
Method
- Wash and cut the beets, carrots, onions, and zucchini into pieces.
- In a pot, melt the butter and sauté the onions until they turn golden.
- Add the carrots, zucchini, and beets, sauté for about 5 minutes.
- Pour in the beef broth, bring to a boil, and cook for 20 minutes.
- Add the sauerkraut and cook for another 10 minutes.
- Blend the soup with a mixer and add white wine vinegar, salt, and pepper.
- Finally, garnish with sour cream and serve hot.
The story
Shchi s kyseloy pyerkhvoy is a traditional soup that dates back to the times of the Galician kingdom, when the acidity of beets and carrots was used to ferment the soup.
