Soto Laksa

A hot fish soup and broth dish, flavored with a blend of spices and vegetables, typical of the Terengganu region in Malaysia.

Ingredients
- 1 kg of fish, cut into pieces
- 2 liters of fish broth
- 4 garlic cloves, minced
- 2 onions, chopped
- 2 green chilies, sliced
- 1 tablespoon of cumin powder
- 1 tablespoon of fennel seed powder
- 1 tablespoon of salt
- 1 red onion, chopped
- 1 red pepper, chopped
- 1 white onion, chopped
- 200 g of rice vermicelli
Method
- In a pot, bring the fish broth and fish to a boil, cook for 10-15 minutes.
- In another pan, sauté the garlic, onions, and green chilies in a mixture of oil and butter.
- Add the spices and salt, cook for 2 minutes.
- Add the fish broth and fish to the sautéed mixture, stir well.
- Bring to a boil and cook for 5-10 minutes.
- In a bowl, place the rice vermicelli and pour in the hot broth.
- Serve the broth with the fish and vegetables on top, garnish with chopped red peppers.
