Mallorcan Sobrasada is a unique, sweet and slightly crumbly pork cheese with a distinctive flavor.

Ingredients
- 250 g of pork meat
- 50 g of pork fat
- 50 g of oil
- 2 tablespoons of sugar
- 1 tablespoon of salt
- 1 tablespoon of pepper
- 1 tablespoon of bay leaf
- 1 tablespoon of paprika
- 1 tablespoon of oregano
- 1 tablespoon of parsley
- 1 tablespoon of rosemary
- 1 tablespoon of thyme
Method
- In a pan, mix the pork meat, pork fat, oil, sugar, salt, and pepper.
- Add the herbs: bay leaf, paprika, oregano, parsley, rosemary, and thyme, and mix well.
- Allow the mixture to cool until it has cooled.
- Form the balls with the dough and put them in a freezer container.
- Store in the refrigerator or freezer.
The story
Sobrasada originated on the island of Mallorca and is said to have been created as a way to use leftover pork.
