Ingredients

  • 250 g of pork meat
  • 50 g of pork fat
  • 50 g of oil
  • 2 tablespoons of sugar
  • 1 tablespoon of salt
  • 1 tablespoon of pepper
  • 1 tablespoon of bay leaf
  • 1 tablespoon of paprika
  • 1 tablespoon of oregano
  • 1 tablespoon of parsley
  • 1 tablespoon of rosemary
  • 1 tablespoon of thyme

Method

  1. In a pan, mix the pork meat, pork fat, oil, sugar, salt, and pepper.
  2. Add the herbs: bay leaf, paprika, oregano, parsley, rosemary, and thyme, and mix well.
  3. Allow the mixture to cool until it has cooled.
  4. Form the balls with the dough and put them in a freezer container.
  5. Store in the refrigerator or freezer.

The story

Sobrasada originated on the island of Mallorca and is said to have been created as a way to use leftover pork.
