A delectable snoek pate, a fish typical of the Cape that becomes a luxurious dish.

Ingredients
- 200 g of snoek, sliced
- 100 g of butter
- 50 g of chopped onion
- 50 g of chopped zucchini
- 20 g of chopped parsley
- 100 ml of white wine
- Salt and pepper to taste
- 100 g of roquefort cheese
- 100 g of gorgonzola cheese
Method
- In a saucepan, sauté the snoek in butter over medium heat.
- Add the onion and zucchini, cook for a few minutes.
- Pour in the white wine and let it reduce.
- While the mixture cools, add the parsley.
- In a bowl, mix the cheeses with the snoek mixture.
- Pile the pate into a serving dish, garnish with parsley.
- Bake in the oven at 180°C for 15 minutes.
- Serve warm as an appetizer.
