Smoked Salmon Chowder

Ingredients
- 300 g of smoked salmon fillets
- 2 medium onions
- 2 carrots
- 2 celery stalks
- 1 zucchini
- 1 liter of fish broth
- 100 ml of milk
- 2 tablespoons of butter
- 1 tablespoon of flour
- 100 g of potatoes
- Salt and pepper to taste
- 100 g of chopped parsley
Method
- Dice the onions, carrots, celery, and zucchini into cubes.
- In a pan, sauté the onions in butter until they become translucent.
- Add the carrots, celery, and zucchini, sauté for another 5 minutes.
- Add the flour and stir well to form a roux.
- Add the fish broth and milk, bring to a boil and let it simmer for 10 minutes.
- Cut the potatoes into cubes and add them to the broth, season with salt and pepper.
- Cook for 15-20 minutes until the potatoes are soft.
- Add the smoked salmon fillets and chopped parsley, gently mix.
- Serving suggestion: serve hot in a bowl, garnish with a bit of fresh parsley.
