Pampanga's Sisig is a delicious dish made from pieces of pork belly and intestines, roasted and then finely chopped with onions and chili.

Ingredients
- 200 g of pork belly
- 200 g of pork intestines
- 2 onions
- 2 chili peppers
- 50 ml of palm oil
- 2 tablespoons of soy sauce
- 1 tablespoon of chili sauce
- Salt to taste
- Pepper to taste
Method
- Cut the pork belly and pork intestines into small pieces.
- Fry the pork belly in a pan with palm oil until it becomes crispy.
- Add the intestines and cook for 15-20 minutes, stirring occasionally.
- Finely chop the onions and chili peppers.
- Add the onions and chili peppers to the pan with the pork belly and intestines, stir well.
- Add the soy sauce, chili sauce, salt, and pepper, stir well.
- Cook for 10-15 minutes on medium heat, stirring occasionally.
- Serve the Sisig hot, serving with bread or as a main course.
