Ingredients

  • 400g of beef
  • 1 onion, finely chopped
  • 1 tablespoon of ground ginger
  • 1 tablespoon of ground red pepper
  • 1 tablespoon of apple cider vinegar
  • 1 tablespoon of extra virgin olive oil
  • Salt to taste
  • 12 wooden skewers for kebabs
  • 1 lemon
  • Bay leaves for serving
  • Yogurt and mint sauce for serving

Method

  1. Mix the beef, finely chopped onion, ground ginger, ground red pepper, apple cider vinegar, extra virgin olive oil, and salt in a large bowl.
  2. Form small meatballs with your hands, ensuring they are reasonably large for the Şiş Köfte.
  3. Skewer the meatballs onto the wooden kebab sticks, leaving a little space between each one.
  4. Let the Şiş Köfte rest for at least 30 minutes before cooking.
  5. Grill the Şiş Köfte on a high heat grill for 5-7 minutes on each side, or until they are crispy.
  6. Serve the Şiş Köfte with lemon wedges and yogurt and mint sauce, garnished with bay leaves.
  7. Alternatively, Şiş Köfte can be baked in the oven at 200°C for 20-25 minutes, turning once halfway through cooking.

Şiş Köfte were introduced to İzmir from ancient Turkey, where they were a popular dish among merchants and traders.
