Şiş Köfte
A delectable specialty from İzmir, Şiş Köfte are crispy on the outside and tender on the inside, seasoned with aromatic spices.

Ingredients
- 400g of beef
- 1 onion, finely chopped
- 1 tablespoon of ground ginger
- 1 tablespoon of ground red pepper
- 1 tablespoon of apple cider vinegar
- 1 tablespoon of extra virgin olive oil
- Salt to taste
- 12 wooden skewers for kebabs
- 1 lemon
- Bay leaves for serving
- Yogurt and mint sauce for serving
Method
- Mix the beef, finely chopped onion, ground ginger, ground red pepper, apple cider vinegar, extra virgin olive oil, and salt in a large bowl.
- Form small meatballs with your hands, ensuring they are reasonably large for the Şiş Köfte.
- Skewer the meatballs onto the wooden kebab sticks, leaving a little space between each one.
- Let the Şiş Köfte rest for at least 30 minutes before cooking.
- Grill the Şiş Köfte on a high heat grill for 5-7 minutes on each side, or until they are crispy.
- Serve the Şiş Köfte with lemon wedges and yogurt and mint sauce, garnished with bay leaves.
- Alternatively, Şiş Köfte can be baked in the oven at 200°C for 20-25 minutes, turning once halfway through cooking.

Şiş Köfte were introduced to İzmir from ancient Turkey, where they were a popular dish among merchants and traders.
