A traditional Jeonju-style chicken broth, made with vegetables and meat, perfect for a winter culinary experience.

Ingredients
- 400 g of chicken, cut into pieces
- 500 ml of chicken broth
- 2 onions, sliced
- 2 carrots, sliced
- 1 red pepper, cut into pieces
- 100 g of beef, cut into pieces
- 2 tablespoons of soybean oil
- 1 tablespoon of sake
- 1 tablespoon of soy sauce
- salt and pepper to taste
- 2 scallions, halved
- Soy sauce and chili powder for serving
Method
- In a large pot, heat the soybean oil and sauté the onions until golden brown.
- Add the chicken and beef, cooking until well done.
- Add the carrots and red pepper, cooking for 5-7 minutes.
- Pour in the chicken broth, add the sake and soy sauce, bring to a boil and reduce heat.
- Simmer for 20-25 minutes, adding salt and pepper to taste.
- Serve in bowls, adding the halved scallions.
- Serve with soy sauce and chili powder on the side.
The story
Originating from the city of Jeonju in South Korea, sinseollo dates back to the Joseon dynasty era, when it was served to keep the body warm during the cold winters.
