Ingredients

  • 200g of mixed vegetables (black cabbage, radish, red bell pepper, onion)
  • 200g of fish or fish meat (e.g., salmon or tuna)
  • 1 calamansi or lime, for sourness
  • 2 onions, chopped
  • 2 garlic cloves, minced
  • 2 tablespoons of coconut oil
  • 200ml of coconut water or calamansi juice
  • 1 tablespoon of soy sauce
  • 1 tablespoon of sugar
  • salt and pepper to taste
  • 2 tablespoons of dried cherries, optional

Method

  1. Cut the vegetables into pieces and slice the fish or fish meat.
  2. In a large pan, sauté the chopped onion and minced garlic in coconut oil.
  3. Add the vegetables and fish or fish meat, stir well.
  4. Pour the coconut water or calamansi juice and the sautéed onions and garlic into a pot.
  5. Bring to a boil, reduce heat, and simmer for 20-30 minutes.
  6. Add soy sauce, sugar, salt, and pepper, stir and let it boil for 5 minutes.
  7. Serve the sinigang hot, adding dried cherries if desired.
