A classic of Sinaloan cuisine, Sinaloan ceviche is a delightful dish of fresh fish marinated in lime vinegar and seasoned with authentic local spices.

Ingredients
- 400g of sea fish, cubed
- 2 limes
- 1 red onion, chopped
- 2 tablespoons of dried chili
- 1 tablespoon of salt
- 1 tablespoon of sugar
- 1 tablespoon of olive oil
- 1 tablespoon of coriander
- 1 tablespoon of green chili
- 1 tablespoon of white onion, chopped
- 1 tablespoon of San Juan herb
- Water for seasoning
Method
- In a large bowl, mix the fish with lime juice and let it marinate for 10-15 minutes.
- In another bowl, mix olive oil, dried chili, salt, sugar, coriander, green chili, and water.
- Add the chopped red and white onions to the marinated fish.
- Pour the seasoning mixture over the fish and gently mix.
- Serve cold with tomatoes, onions, and limes on the side.
