Siga Misir

A traditional Ethiopian dish, delicious and colorful, made with beans and vegetables.

Ingredients
- 200 gr of dried beans
- 200 gr of mixed vegetables (zucchini, squash, bell peppers, onion)
- 500 ml of water
- 3 tablespoons of olive oil
- 2 onions
- Salt to taste
- Black pepper
- 1 cube of vegetable broth
Method
- Rinse the dried beans thoroughly and soak them in water with salt for 1-2 hours.
- Cut the vegetables into pieces and sauté them in a pan with olive oil.
- Fry the vegetables for 5-7 minutes until they are soft.
- Add the cooked beans and vegetable broth, cover, and cook for 10-15 minutes.
- Season with salt and pepper to taste, mix well, and serve hot.
- Serving suggestion: Siga Misir can be served as a first course or as a side dish with meat or fish.
