A traditional Sicilian pasta dish, Linguiza alla Siciliana is a delightful blend of tomato sauce and spices.

Ingredients

  • 500g of linguine
  • 600g of fresh tomatoes
  • 2 onions
  • 2 cloves of garlic
  • 1 tablespoon of chili pepper
  • 2 tablespoons of olive oil
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 100g of butter
  • 100g of fresh mozzarella
  • Chopped parsley
  • 100g of grated parmesan

Method

  1. In a pan, sauté the garlic and onions in olive oil.
  2. Add the cubed tomatoes and chili pepper, simmer on low heat for 30 minutes.
  3. In a pot, heat the butter and add the pasta with the tomato sauce.
  4. Serve immediately, garnished with mozzarella, parsley, and parmesan.
  5. Serve hot.

Linguiza alla Siciliana is a dish that dates back to the Norman era, when chili peppers were introduced to Sicilian cuisine.
