A traditional Sicilian pasta dish, Linguiza alla Siciliana is a delightful blend of tomato sauce and spices.

Ingredients
- 500g of linguine
- 600g of fresh tomatoes
- 2 onions
- 2 cloves of garlic
- 1 tablespoon of chili pepper
- 2 tablespoons of olive oil
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 100g of butter
- 100g of fresh mozzarella
- Chopped parsley
- 100g of grated parmesan
Method
- In a pan, sauté the garlic and onions in olive oil.
- Add the cubed tomatoes and chili pepper, simmer on low heat for 30 minutes.
- In a pot, heat the butter and add the pasta with the tomato sauce.
- Serve immediately, garnished with mozzarella, parsley, and parmesan.
- Serve hot.
The story
Linguiza alla Siciliana is a dish that dates back to the Norman era, when chili peppers were introduced to Sicilian cuisine.
