Ingredients

  • 400g of shrimp
  • 4 eggs
  • 100g of potatoes
  • 1 onion
  • Extra virgin olive oil
  • Salt
  • Pepper

Method

  1. Clean and flatten the shrimp, then chop the onion into cubes.
  2. Beat the eggs in a bowl and season with salt and pepper.
  3. In another bowl, chop the potatoes into cubes and mix with the onion.
  4. In a non-stick pan, heat some oil and fry the shrimp until golden.
  5. In a baking dish, add half of the eggs in a layer, then the shrimp, potatoes and onion, and the rest of the eggs on top.
  6. Brush lightly with some oil and bake in the oven at 180°C for 20-25 minutes, until the tortilla is golden.
  7. Let it cool for a few minutes before serving.
