Shrimp Tortilla

A crispy and flavorful shrimp tortilla, typical of A Coruña in Spain.

Ingredients
- 400g of shrimp
- 4 eggs
- 100g of potatoes
- 1 onion
- Extra virgin olive oil
- Salt
- Pepper
Method
- Clean and flatten the shrimp, then chop the onion into cubes.
- Beat the eggs in a bowl and season with salt and pepper.
- In another bowl, chop the potatoes into cubes and mix with the onion.
- In a non-stick pan, heat some oil and fry the shrimp until golden.
- In a baking dish, add half of the eggs in a layer, then the shrimp, potatoes and onion, and the rest of the eggs on top.
- Brush lightly with some oil and bake in the oven at 180°C for 20-25 minutes, until the tortilla is golden.
- Let it cool for a few minutes before serving.
