Shrimp Ceviche

A classic of Cartagena's cuisine, shrimp ceviche is a delightful mix of succulent shrimp marinated in lemon and herbs.

Ingredients
- 400 grams of fresh shrimp
- 1 lemon
- 1 red onion
- 1 tablespoon of chili powder
- 1 tablespoon of chopped onion
- 1 tablespoon of cilantro powder
- 1 tablespoon of olive oil
- 1/2 teaspoon of salt
- 1/2 teaspoon of sugar
- 1 tablespoon of chopped cilantro
- 1 tablespoon of chopped green onion
- 1 teaspoon of white vinegar
Method
- Clean the shrimp and cut them into pieces.
- Mix the lemon juice with salt, sugar, and olive oil.
- In a bowl, combine the shrimp pieces, white vinegar, chopped onion, chili powder, cilantro powder, chopped green onion, and chopped cilantro.
- Add the lemon juice mixture and gently mix.
- Refrigerate the ceviche for at least 30 minutes before serving.
- Top with chopped cilantro before serving.
The story
Shrimp ceviche, like all ceviches in Colombia, has pre-Columbian origins, but has become particularly popular in Cartagena due to its strategic port position.
