Shish Tawook is a delicious skewered chicken marinated for hours and grilled over charcoal, a specialty of Beirut's Lebanese cuisine.

Ingredients
- 4 chicken kebabs
- 1/2 cup apple cider vinegar
- 1 cup olive oil
- 2 tablespoons lemon juice
- 2 tablespoons red wine vinegar
- 2 tablespoons sugar
- 2 tablespoons salt
- 1 tablespoon black pepper
- 1 tablespoon red pepper flakes
- 1 tablespoon bay leaves
- 1 tablespoon thyme
- 1 tablespoon rosemary
Method
- Prepare the chicken kebabs and marinate them with the marinade ingredients.
- While the chicken marinates, prepare the charcoal grill.
- Pour the marinade over the chicken pieces and mix well.
- Let it marinate for at least 4 hours, preferably overnight.
- Grill the chicken pieces on moderate heat for 10-15 minutes on each side.
- Serve hot with a side of tomato salad or bean salad.
