Shish Taouk
The classic shish taouk, crispy on the outside and tender on the inside, often served with yogurt-based sauces.

Ingredients
- 400g of chicken pieces
- 2 tablespoons of olive oil
- 2 tablespoons of balsamic vinegar
- 2 tablespoons of lemon juice
- 2 tablespoons of honey
- 1 tablespoon of black pepper
- 1 tablespoon of salt
- 1 tablespoon of red pepper flakes
- 1 tablespoon of Arabic spice blend
- 400g of potatoes
- 400g of onions
- 400g of bell peppers
Method
- Prepare the chicken by cutting the chicken wings into two pieces and the thighs into four, then marinate them for at least 2 hours in a mixture of olive oil, balsamic vinegar, lemon juice, honey, black pepper, salt, red pepper flakes, and Arabic spice blend.
- Slice the potatoes, onions, and bell peppers into pieces and place them in a bowl.
- Grill the chicken, turning often to achieve a nice sear, until it is golden and cooked through.
- Serve the chicken with the grilled vegetables and dress with goat yogurt or peanut butter.
- Arrange the chicken and vegetable pieces on a plate and garnish with Arabic spices and red pepper flakes.
The story
Shish Taouk is a traditional Levantine specialty, widely enjoyed in Lebanon, Syria, and Turkey. Originally prepared by skewering pieces of chicken and roasting them over a metal rod, today it is typically grilled on skewers.
