Shchi (Cabbage Soup)

A classic of Ukrainian cuisine, shchi is a hearty cabbage and vegetable soup in a rich broth.

Ingredients
- 1 kg of sweet cabbage, cut into pieces
- 2 carrots, cubed
- 1 onion, chopped
- 2 bunches of dill
- 1 tablespoon of red pepper flakes
- 1 liter of meat broth
- 1 teaspoon of salt
- 1 tablespoon of olive oil
- 100 g of potatoes, cubed
- 50 g of lard, cut into strips
- 1 lemon, zested
- Noodles or bread for serving
Method
- In a large pot, heat the olive oil and sauté the onion and carrots.
- Add the lard and let it melt.
- Add the sweet cabbage, dill bunches, and red pepper flakes, and sauté for 5 minutes.
- Pour in the meat broth and bring to a boil, cover and cook for 20 minutes.
- Add the potatoes, salt, and zest of lemon.
- Cook for another 10 minutes until the potatoes are tender.
- Serve with noodles or bread.
- Taste and enjoy!
The story
Shchi is a traditional soup found throughout Ukraine, but it's particularly popular in the Kharkiv region. Its origins date back to the 19th century, when it was a cost-effective way to prepare a nourishing and warming soup.
