Ingredients

  • 1 kg of sweet cabbage, cut into pieces
  • 2 carrots, cubed
  • 1 onion, chopped
  • 2 bunches of dill
  • 1 tablespoon of red pepper flakes
  • 1 liter of meat broth
  • 1 teaspoon of salt
  • 1 tablespoon of olive oil
  • 100 g of potatoes, cubed
  • 50 g of lard, cut into strips
  • 1 lemon, zested
  • Noodles or bread for serving

Method

  1. In a large pot, heat the olive oil and sauté the onion and carrots.
  2. Add the lard and let it melt.
  3. Add the sweet cabbage, dill bunches, and red pepper flakes, and sauté for 5 minutes.
  4. Pour in the meat broth and bring to a boil, cover and cook for 20 minutes.
  5. Add the potatoes, salt, and zest of lemon.
  6. Cook for another 10 minutes until the potatoes are tender.
  7. Serve with noodles or bread.
  8. Taste and enjoy!

The story

Shchi is a traditional soup found throughout Ukraine, but it's particularly popular in the Kharkiv region. Its origins date back to the 19th century, when it was a cost-effective way to prepare a nourishing and warming soup.
