Ingredients

  • 2 pieces of pork belly, about 1 kg
  • 1 large onion
  • 600 ml of soy sauce
  • 1 tablespoon of dark soy sauce
  • 2 tablespoons of oyster sauce
  • 1 tablespoon of red sugar
  • 2 tablespoons of water
  • 1 tablespoon of salt
  • 1 piece of ginger, grated
  • 1 piece of chili, chopped
  • 2 bay leaves
  • 2 sprigs of perilla

Method

  1. Take the pork belly, score the skin and make deep cuts in the meat, without reaching the skin.
  2. In a bowl, mix the soy sauce, water, salt, red sugar, ginger, and chili.
  3. Submerge the pork belly in the prepared broth, ensuring it is fully covered.
  4. In a pot, heat the soy oil, add the chopped onion and sauté until golden.
  5. Add the pork belly and cook for 15-20 minutes on medium heat.
  6. Add the bay leaves and perilla sprigs, cover, and simmer on low heat for 2-3 hours.
  7. Serve hot, with the broth as a sauce.
