Shakshuka
A delicious and savory breakfast or lunch, shakshuka is a dish of eggs poached in a spicy tomato and pepper sauce.

Ingredients
- 4 eggs
- 1 onion
- 2 red bell peppers
- 2 ripe tomatoes
- 3 tablespoons olive oil
- 1 tablespoon red pepper flakes
- 1 tablespoon sugar
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon apple cider vinegar
- 1 tablespoon cornstarch
- Parsley
Method
- Prepare the onion and bell peppers, chop them into small pieces and sauté in a pan with olive oil.
- Add the chopped tomatoes, red pepper flakes, sugar, salt, and black pepper, stir well.
- Bring to a boil, reduce heat, cover and cook for 15-20 minutes.
- In a bowl, mix the apple cider vinegar with cornstarch, add it to the sauce little by little and stir.
- Make a hole in the center of the sauce, add the eggs and cook for 5-7 minutes.
- Serve hot with chopped parsley on top.
