Ingredients

  • 4 eggs
  • 1 onion
  • 2 red bell peppers
  • 2 ripe tomatoes
  • 3 tablespoons olive oil
  • 1 tablespoon red pepper flakes
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon cornstarch
  • Parsley

Method

  1. Prepare the onion and bell peppers, chop them into small pieces and sauté in a pan with olive oil.
  2. Add the chopped tomatoes, red pepper flakes, sugar, salt, and black pepper, stir well.
  3. Bring to a boil, reduce heat, cover and cook for 15-20 minutes.
  4. In a bowl, mix the apple cider vinegar with cornstarch, add it to the sauce little by little and stir.
  5. Make a hole in the center of the sauce, add the eggs and cook for 5-7 minutes.
  6. Serve hot with chopped parsley on top.
  7. Enjoy!
