Shakshouka
A traditional Tunisian dish featuring eggs poached in a spicy tomato and pepper sauce with vegetables.

Ingredients
- 4 eggs
- 2 onions
- 2 ripe tomatoes
- 1 zucchini
- 1 chili pepper
- 2 tablespoons of olive oil
- 1 tablespoon of chili powder
- 1 tablespoon of salt
- 1 tablespoon of sugar
- 1 tablespoon of balsamic vinegar
- 1 red onion
- 1/2 teaspoon of saffron powder
Method
- Clean and chop the onions, tomatoes, zucchini, and chili pepper.
- In a large pan, heat the olive oil and sauté the onions until they become golden.
- Add the tomatoes, zucchini, chili pepper, salt, sugar, and balsamic vinegar, and cook over medium heat for 20-25 minutes.
- Make small holes in the sauce with a spoon and add the eggs.
- Cover the pan and cook on low heat for 10-15 minutes, until the eggs are cooked.
- Add a bit of saffron to the sauce and gently stir it in.
- Serve hot with Tuscan or Arab bread.
