Seco a la Criolla
A traditional Piurese dish, Seco a la Criolla is a delightful mutton roast seasoned with spices and vegetables.

Ingredients
- 1 kg of mutton
- 2 onions
- 2 carrots
- 2 zucchinis
- 1 green bell pepper
- 1 red bell pepper
- 2 tablespoons of olive oil
- 1 tablespoon of lemon juice
- 2 tablespoons of soy sauce
- 1 tablespoon of chili powder
- 1 tablespoon of sugar
- Salt and pepper to taste
Method
- Cut the mutton into equal-sized pieces and set aside.
- Chop the onions, carrots, zucchinis, and bell peppers into cubes and place them in a bowl.
- In another bowl, mix the olive oil, lemon juice, soy sauce, chili powder, sugar, salt, and pepper.
- Add the mutton to the bowl with the vegetables and mix well to ensure the meat absorbs the marinade.
- Let the meat marinate for at least 30 minutes before placing it in the preheated oven at 180°C for 1-1.5 hours.
- Serve the Seco a la Criolla hot, accompanied by a plate of rice or potatoes.
