A traditional Swabian dish, Schupfnudeln are thin tagliatelle served with a onion and carrot sauce.

Ingredients
- 300 g of hard wheat pasta
- 300 g of onions
- 200 g of carrots
- 200 g of bacon
- 2 tablespoons of olive oil
- salt and pepper to taste
- 200 ml of beef broth
- 100 g of grated cheese
Method
- Boil plenty of salted water and add the pasta, cook for 3-4 minutes or until al dente.
- Dice the onions and carrots into small cubes.
- In a pan, sauté the onions and carrots with olive oil for about 10 minutes, until they are golden and soft.
- Add the bacon cut into pieces and cook for another 5-7 minutes.
- Add the beef broth and bring to a boil, then reduce heat and let it simmer for 10-15 minutes.
- Add the pasta to the sauce and mix well, then add the grated cheese.
- Serve immediately in a warm bowl.
