Ingredients

  • 300 g of hard wheat pasta
  • 300 g of onions
  • 200 g of carrots
  • 200 g of bacon
  • 2 tablespoons of olive oil
  • salt and pepper to taste
  • 200 ml of beef broth
  • 100 g of grated cheese

Method

  1. Boil plenty of salted water and add the pasta, cook for 3-4 minutes or until al dente.
  2. Dice the onions and carrots into small cubes.
  3. In a pan, sauté the onions and carrots with olive oil for about 10 minutes, until they are golden and soft.
  4. Add the bacon cut into pieces and cook for another 5-7 minutes.
  5. Add the beef broth and bring to a boil, then reduce heat and let it simmer for 10-15 minutes.
  6. Add the pasta to the sauce and mix well, then add the grated cheese.
  7. Serve immediately in a warm bowl.

Schupfnudeln is a traditional dish from Swabia, a region in southwestern Germany, with a history dating back at least to the 18th century.
