A typical Salzburg salmon-based appetizer, crispy and juicy.

Ingredients
- 2 salmon fillets, cut into thick slices
- 100 g cooked ham, cut into strips
- 50 g grana cheese, grated
- 100 g onion, sliced thinly
- 200 ml pumpkin cream
- 2 tablespoons extra virgin olive oil
- Salt and pepper to taste
- 100 g bread, cut into cubes
- 1 egg, beaten
- 1 tablespoon chopped parsley
- 1 tablespoon chopped red onion
Method
- In a bowl, mix the pumpkin cream, olive oil, salt, and pepper.
- In another bowl, mix the bread crumbs, beaten egg, parsley, and chopped red onion.
- Dip the salmon slices in the cream mixture, then in the breadcrumb mixture.
- In a non-stick pan, fry the salmon slices in hot oil until golden brown.
- Arrange the salmon slices in a cross on a baking dish, add the onion and grated grana cheese.
- Preheat the oven to 200°C and bake for 15-20 minutes until the cheese is golden.
- Serve hot, accompanied by a salad or polenta.
