Ingredients

  • 300 g of flour
  • 200 ml of milk
  • 1 teaspoon of yeast powder
  • 100 g of sugar
  • 2 eggs
  • 50 g of butter
  • 100 g of Schnittlauch
  • 50 g of cooked ham
  • 100 g of grated cheese
  • oil for frying
  • icing sugar for decoration

Method

  1. In a bowl, mix the flour, yeast powder, and sugar.
  2. In another bowl, mix the milk and eggs, then add the melted butter.
  3. Gradually mix the liquid into the flour mixture until you get a homogeneous dough.
  4. Divide the dough into small pieces, form them into balls, and knead them with your hands to make them dense.
  5. Make a small indentation in each ball and fill it with Schnittlauch, cooked ham, and grated cheese.
  6. Fry the krapfen in hot oil until they puff up and turn golden brown.
  7. Drain the krapfen on paper towels and decorate them with icing sugar.
  8. Serve warm and enjoy!

The story

Schnittlauch krapfen are an ancient sweet from Austrian tradition, particularly popular in Vienna. They were first made during the Carnival period as a way to use up leftover ingredients.
