Ingredients

  • 4 chickens
  • 2 liters of chicken broth
  • 1 onion
  • 2 carrots
  • 2 cucumbers
  • 2 garlic stalks
  • 100 grams of parsley
  • 100 grams of thyme
  • 100 grams of rosemary
  • 100 grams of chili
  • Salt and pepper to taste
  • Olive oil

Method

  1. Prepare the chickens by cutting off the wings and legs, then place them in a bowl and cover with chicken broth. Let them rest for at least 30 minutes.
  2. Meanwhile, slice the garlic, onion, carrots, and cucumbers into large pieces.
  3. In a baking dish, arrange the chickens and place the sliced vegetables around them.
  4. Drizzle with olive oil, season with spices, and add salt and pepper to taste.
  5. Make a hole in the middle of the chickens and stuff with rosemary and thyme leaves.
  6. Bake at 180°C for about 1 hour and a half, checking the cooking every 30 minutes.
  7. Serve hot, accompanied by roasted potatoes or rice.
