Ingredients

  • 400g of sausages
  • 500g of potatoes
  • 2 onions
  • 2 garlic cloves
  • 100ml of olive oil
  • 100ml of beef broth
  • 100g of lard
  • 1 teaspoon of paprika
  • salt and pepper to taste
  • 200ml of tomato sauce
  • chopped parsley for serving

Method

  1. Cut the potatoes into cubes and the onions into thin slices.
  2. Fry the onion slices in a pan with olive oil and lard until golden brown.
  3. Add the potatoes and fry until they are just cooked.
  4. In a pot, cook the sausages over medium heat until well done.
  5. Add the beef broth, tomato sauce, paprika, salt, and pepper.
  6. Pour the sauce over the cooked sausages and potatoes, mix well.
  7. Simmer over medium heat for a few minutes until the sauce is sufficiently thick.
  8. Serve hot, garnished with chopped parsley.

The story

Schäufele is a traditional dish from Steiermark with roots dating back to the 17th century, when farmers would make use of every piece of meat available to create this economical and nutritious meal.
