Ingredients
- 2 kg of sauerkraut
- 500 g of smoked bacon
- 2 onions
- 2 cloves of garlic
- 3 tablespoons of olive oil
- 3 tablespoons of dry white wine
- 1 liter of beef broth
- 1 teaspoon of salt
- 1 teaspoon of black pepper
- 200 g of grated grana cheese
- 100 g of butter
- 1 tablespoon of chopped parsley
Method
- Clean and cut the sauerkraut into pieces about 5 cm in size.
- Sauté the onions and garlic in a large pan with olive oil.
- Add the smoked bacon and cook over medium heat until it melts.
- Add the sauerkraut and cook over medium heat for about 20 minutes, stirring occasionally.
- In a glass, mix the white wine with the beef broth, then add to the pan and bring to a boil.
- Cook for another 15-20 minutes, adding salt and black pepper.
- Pour the grated grana cheese and butter into the pan and stir until the cheese melts.
- Serve in plates and garnish with chopped parsley.
