Ingredients

  • 2 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup butter
  • 1/4 cup fruit gelatin
  • 1/4 cup cold water
  • 1 cup fresh or canned Saskatoon berries
  • 1/4 cup sugar
  • 1/4 cup lemon juice
  • 1/4 cup powdered sugar
  • 1 egg
  • 1/2 cup sugar
  • 1/2 cup flour
  • 1/2 cup butter

Method

  1. Mix the flour, sugar, and butter until you get a coarse flour mixture. Add the fruit gelatin and cold water, mixing until a homogeneous dough forms.
  2. Form a ball of dough and cover with plastic wrap. Let it rest in the refrigerator for 30 minutes.
  3. Prepare the filling by mixing the Saskatoon berries, sugar, lemon juice, and powdered sugar.
  4. Prepare the tart base by placing the dough in a pie dish, then adding the filling.
  5. Cover with the top crust, cutting small slits for steam to escape. Preheat the oven to 180°C and bake for 30-40 minutes.
  6. Beat the egg and flour to make a crunchy topping. Pour over the tart and bake for an additional 10-15 minutes.
  7. Let it cool and serve either cold or warm.
