Sardinhas ao Ar Livre is a traditional Portuguese dish where fresh sardines are grilled directly on heated stones.

Ingredients
- 500g of fresh sardines
- 200g of grill stones
- 1 tablespoon of extra virgin olive oil
- Salt to taste
- Black pepper to taste
- 1 lemon
- 1 red onion in pieces (optional)
Method
- Clean and split the sardines in half, removing the backbone.
- Light the fire and heat the grill stones until they are very hot.
- Drizzle a bit of extra virgin olive oil on the hot stones.
- Turn off the fire and wet the stones with a damp brush.
- Place the sardines on the stones and season with salt and pepper.
- Grill for 5-7 minutes, turning the sardines with a fish spatula.
- Squeeze some lemon juice over the sardines and sprinkle with chopped red onion (if using).
- Serve immediately, hot and delicious!
