Sardines and White Beans

A traditional dish from Cagliari, Su Fasule e Su Sarde combines fresh sardines with a white bean sauce.

Ingredients
- 400g white beans
- 4 fresh sardines
- 200g pancetta
- 2 onions
- 2 garlic cloves
- 200ml olive oil
- 100ml white wine
- salt and pepper to taste
- 200g farro
- 100g parsley
- 100g cucumbers
- 100g tomatoes
Method
- In a pot, cook the white beans with a bit of water and salt for about 40 minutes.
- Meanwhile, cut the pancetta into strips and sauté it in another pot with olive oil.
- Add the onions and garlic, sauté for a few minutes.
- Clean and cut the sardines, then add them to the pot with the pancetta and cook for 5-7 minutes.
- In a separate pan, cook the farro with a bit of water for about 20 minutes.
- Add the white wine to the pot of beans and sardines, let it boil for 10 minutes.
- Serve hot, garnished with chopped cucumbers and tomatoes.
- Top the farro on a portion of beans and sardines.
The story
Su Fasule e Su Sarde is a traditional Sardinian dish, particularly popular in Cagliari. Its origins date back to the pre-industrial era when sardines were abundant and easily accessible.
