Ingredients

  • 400g white beans
  • 4 fresh sardines
  • 200g pancetta
  • 2 onions
  • 2 garlic cloves
  • 200ml olive oil
  • 100ml white wine
  • salt and pepper to taste
  • 200g farro
  • 100g parsley
  • 100g cucumbers
  • 100g tomatoes

Method

  1. In a pot, cook the white beans with a bit of water and salt for about 40 minutes.
  2. Meanwhile, cut the pancetta into strips and sauté it in another pot with olive oil.
  3. Add the onions and garlic, sauté for a few minutes.
  4. Clean and cut the sardines, then add them to the pot with the pancetta and cook for 5-7 minutes.
  5. In a separate pan, cook the farro with a bit of water for about 20 minutes.
  6. Add the white wine to the pot of beans and sardines, let it boil for 10 minutes.
  7. Serve hot, garnished with chopped cucumbers and tomatoes.
  8. Top the farro on a portion of beans and sardines.

Su Fasule e Su Sarde is a traditional Sardinian dish, particularly popular in Cagliari. Its origins date back to the pre-industrial era when sardines were abundant and easily accessible.
