Sarawak Kolo Mee

A traditional Sarawak dish, Kolo Mee is a delightful, briny and aromatic noodle delicacy.

Ingredients
- 200g of rice noodles
- 500g of raw swordfish
- 2 onions
- 2 cloves of garlic
- 500ml of fish stock
- 1 tablespoon of soy sauce
- 1 tablespoon of chili sauce
- 1 tablespoon of coconut oil
- Salt and pepper to taste
- 100g of marinated vegetables
- 100g of shrimp
Method
- Prepare the fish stock and let it cool.
- Chop the garlic and onions.
- In a pan, sauté the garlic and onions in coconut oil.
- Add the raw swordfish and cook until it's done.
- While the fish is cooking, boil the rice noodles.
- Add the sautéed vegetables and fish stock to the fish noodles.
- Add the marinated vegetables and shrimp.
- Serve hot, topped with chili sauce.

Kolo Mee originated in Sarawak, Malaysia, as a way to utilize local fishing leftovers, blending local tradition with culinary creativity.
