Samgyetang
A ginseng chicken soup, a classic of Korean cuisine, warming and nutritious.

Ingredients
- 1 young chicken (about 3.3 lbs)
- 6 ginseng roots
- 100 g zucchini
- 100 g carrots
- 100 g potatoes
- 2 onions
- 100 g jujubes
- 100 g rice
- 200 ml water
- 1 tablespoon sesame oil
- 1 teaspoon salt
- 1 teaspoon black pepper
Method
- Cut the chicken into pieces and simmer in boiling water for 5 minutes to remove blood and impurities.
- In a pot, heat the sesame oil and sauté the onions until they turn golden brown.
- Add the chicken, ginseng roots, zucchini, carrots, potatoes, jujubes, and rice. Cover with water and bring to a boil.
- Simmer over medium heat for 1 hour, adding water if necessary to maintain the liquid level.
- Grind the salt and pepper and add to the broth. Let it simmer for 10 minutes to allow the flavors to meld.
- Serve hot in individual portions, accompanied by a bit of rice.
The story
Samgyetang originates from South Korea and is believed to have its roots in the Joseon period, using ginseng for its tonifying properties.
