A classic Patagonian dish, salt cod with níscalo is a delightful combination of salted fish and wild mushrooms.

Ingredients

  • 200g of salt cod, drained and squeezed
  • 100g of níscalo
  • 1 onion
  • 2 cloves of garlic
  • 200g of potatoes
  • 200g of zucchini
  • 100g of shallots
  • 50g of butter
  • 50g of olive oil
  • 100ml of white wine
  • salt and pepper to taste
  • 100ml of fish broth

Method

  1. Rinse the salt cod and dry it well. Drain and gently squeeze it.
  2. Clean the níscalo, wash them, and dry them.
  3. In a pan, sauté the garlic and onion in olive oil.
  4. Add the níscalo and cook for a few minutes.
  5. While the níscalo is cooking, cut the potatoes into cubes and the zucchini into thin slices.
  6. Add the potatoes and zucchini to the pan with the níscalo, stir well.
  7. In another pan, sauté the shallots in butter.
  8. Add the white wine and fish broth to the pan with the vegetables, bring to a boil.
  9. Cook over medium-high heat for about 20 minutes, check the water level regularly and add if necessary.
  10. At the end of the time, add the salt cod, gently stir and cook for another 5-10 minutes.
  11. Season with salt and pepper to taste, serve hot.

Salt cod with níscalo is a specialty of Patagonia, where salted fish has been preserved for centuries thanks to the dry and cold climate. Wild mushrooms typical of Patagonia, níscalo, are used to add a unique flavor to the dish.
