Ingredients

  • 200 g of 'ncannulate pasta
  • 200 g of stracchino cheese
  • 400 g of tomatoes
  • 2 onions
  • 2 fennel bulbs
  • 2 garlic cloves
  • 50 g of butter
  • 50 g of flour
  • 1 liter of beef broth
  • salt and pepper to taste
  • 2 tablespoons of olive oil

Method

  1. Make the 'ncannulate pasta at home by mixing flour and eggs until you get a flexible dough.
  2. Prepare the filling by mixing the stracchino cheese with beef broth.
  3. Sauté the onions, garlic cloves, and fennel bulbs in a pan with olive oil.
  4. Add the chopped tomatoes and cook on medium heat for 20 minutes.
  5. Pass the 'ncannulate pasta dough through a pasta machine and cook it in plenty of salted water.
  6. Assemble the ravioli by filling the pasta dough with the prepared filling.
  7. Cook the ravioli in salted water for 3-4 minutes.
  8. Add the ravioli to the tomato sauce and serve hot.
