Ingredients

  • 200 g of dried beans
  • 100 g of spinach
  • 2 slices of Arabic bread
  • 1 onion
  • 1 tablespoon of olive oil
  • 1/2 teaspoon of black pepper
  • Salt to taste
  • 2 bay leaves
  • 1 egg

Method

  1. Rinse the beans and cook them in salted water for about 1 hour or until tender.
  2. Peel and chop the onion into cubes.
  3. In a pan, sauté the onion in olive oil and add the cooked beans, black pepper, and salt to taste. Cook for 10 minutes.
  4. Wash and sauté the spinach, then add it to the same pan and cook for another 5 minutes.
  5. Beat the egg over the intersection of the bread slices, then add the bean and spinach mixture on top, and cover with the other slice of bread.
  6. Fry the sandwich in bean oil for 3-5 minutes on each side until golden and crispy.
