Rumbledethumps
A traditional Derry, Ireland dish, rich and delicious with a variety of ingredients.

Ingredients
- 1 kg of potatoes
- 500 g of lentils
- 200 g of peas
- 1 onion
- 2 slices of bacon
- 2 eggs
- 1 tablespoon of oil
- salt and pepper to taste
- 200 ml of milk
Method
- Peel and cut the potatoes into cubes. In a pot, boil the potatoes with a bit of salt for 15-20 minutes, until they are tender.
- In another pot, cook the lentils with a bit of water and salt for 20-25 minutes, until they are soft.
- In a skillet, sauté the onion and garlic in oil. Add the bacon and cook until it is golden.
- Add the peas and cook for 5-7 minutes, until they are soft.
- Combine the potatoes, lentils, peas, and bacon in a large pot. Add the milk, salt, and pepper and stir well.
- Beat the eggs in a bowl and add them to the dish, gently stirring.
- Serve hot, accompanied by bread or toast.
