Rum Cake

A rich, moist, sweet cake, infused with rum and nuts, typical of New Orleans.

Ingredients
- 200 g of flour
- 100 g of sugar
- 2 eggs
- 100 ml of rum
- 50 g of butter
- 1 tablespoon of baking powder
- 1/2 teaspoon of salt
- 50 g of chopped nuts
- 100 ml of milk
Method
- Preheat the oven to 180°C and mix the flour, sugar, baking powder, and salt in a bowl.
- In another bowl, mix the butter, eggs, rum, and milk.
- Alternate adding the wet mixture to the dry ingredients in two parts, mixing gently after each addition.
- Add the nuts and mix well.
- Check the consistency and add more flour if the mixture is too wet.
- Pour the mixture into a cake pan and bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool before serving.
The story
Rum cake has a history dating back to the British colonial era, when colonists brought rum as an ingredient for sweets.
