Rouladen
Rouladen are a delectable German specialty, consisting of rolled beef slices filled with a rich sauce.

Ingredients
- 4 beef tenderloin slices
- 100 g of raw ham
- 100 g of pancetta
- 100 g of grated cheese
- 100 g of carrots
- 100 g of onion
- 100 g of zucchini
- 50 g of parsley
- 50 g of rosemary
- 200 ml of red wine
- 100 ml of beef broth
- Salt and pepper to taste
Method
- Cut the beef tenderloin slices lengthwise, but not all the way through, forming a pocket.
- Place a slice of ham, a slice of pancetta, a tablespoon of grated cheese, a slice of carrot, a piece of onion, and a slice of zucchini in each pocket.
- Roll and secure the slices with kitchen twine.
- In a pan, sauté the garlic in olive oil, then add the rolled meat.
- Pour in the red wine and beef broth, cover, and cook over medium heat for 30-40 minutes.
- Add the parsley and rosemary, season with salt and pepper to taste.
- Serve hot with a wine and broth sauce.

Rouladen originated in the 18th century in Germany, where they were traditionally prepared for celebrations such as weddings and important festivities.
