Röslibrot
The Röslibrot is a traditional sweet from Bern, rich in complexity and flavor.

Ingredients
- 250 g of flour
- 100 g of sugar
- 2 eggs
- 100 g of butter
- 1 packet of baking powder
- 100 g of pressed cheese
- 1 tablespoon of rum
- 1 tablespoon of cinnamon powder
- 1/4 cup of cold water
- 100 g of crushed almonds
- 100 g of cocoa powder
- 100 g of pulled sugar
Method
- Prepare the dough by mixing flour, sugar, eggs, butter, baking powder, and pressed cheese.
- Add rum, cinnamon, and cold water, and mix well.
- Fold in the crushed almonds and cocoa powder.
- Shape the dough into rolls and place on a floured baking sheet.
- Bake in a preheated oven at 180°C for about 30 minutes, until golden.
- Drizzle with melted pulled sugar.
- Allow to cool and serve.
The story
The Röslibrot was created in the 19th century as a way to use leftover cheese-making residues, becoming a popular Christmas sweet.
