Ropa Vieja
A traditional Cuban dish, Ropa Vieja is a delightful shredded beef stewed in a rich and aromatic sauce.

Ingredients
- 1 kg ground beef
- 1 onion
- 2 carrots
- 1 zucchini
- 1 chili pepper
- 2 tomatoes
- 2 shallots
- 1 liter beef broth
- 1 tablespoon chili powder
- 2 tablespoons vinegar
- 1 teaspoon black pepper
- 1 teaspoon salt
Method
- In a large pot, sauté the onion in oil until translucent, then add the ground beef and cook until well done.
- Add the carrots, zucchini, chili pepper, tomatoes, and shallots, and cook for a few minutes.
- Pour in the beef broth, add chili powder, vinegar, black pepper, and salt, and stir well.
- Cover the pot with a lid and simmer over medium heat for about 2 hours, or until the meat is very tender.
- Let it cool a bit, then use a spoon to shred the meat to achieve the traditional Ropa Vieja consistency.
- Serve hot with rice or potatoes.

Ropa Vieja originates from Cuba, where it was traditionally prepared to transform old or less desirable beef cuts into a delicious stew.
