Ingredients

  • 500 g of ground beef
  • 1 onion
  • 2 carrots
  • 1 zucchini
  • 1 red bell pepper
  • 1 tablespoon of chili
  • 2 spring onions
  • 2 garlic cloves
  • 200 ml of tomato sauce
  • 1 liter of beef broth
  • 1 tablespoon of olive oil
  • salt and pepper to taste

Method

  1. In a large pot, sauté the garlic and olive oil. Add the ground beef and cook until fully cooked.
  2. Chop the onion, carrots, zucchini, and red bell pepper into small pieces and add them to the pot.
  3. Add the chili, spring onions, tomato sauce, and beef broth. Stir well.
  4. Cover and simmer on low heat for about 1 hour, stirring occasionally.
  5. Serve hot in a serving dish, adding salt and pepper to taste.

Ropa Vieja is a culinary specialty with roots in South American kitchens, but it has become particularly popular in Bogotá, where it is served in various restaurants and homes.
