Ingredients

  • 6 artichokes
  • 100g of toasted bread
  • 50g of butter
  • 50g of sugar
  • 100ml of olive oil
  • salt
  • 1 onion
  • 200g of grated pecorino cheese
  • 2 eggs

Method

  1. Prepare the artichokes by trimming the outer leaves and carefully cleaning them.
  2. In a pan, sauté the onion and olive oil.
  3. Add the artichoke leaves and cook on low heat for about 20 minutes.
  4. Meanwhile, sauté the onion with the butter and sugar.
  5. In a bowl, mix the pecorino cheese, eggs, and cream.
  6. Add the artichoke puree and mix well.
  7. Finally, add the onion and sugar mixture and mix thoroughly.
  8. Serve hot with toasted bread on top.
