Ingredients
- 500 g of ricotta
- 200 g of pumpkin
- 200 g of potatoes
- 1 onion
- 1 zucchini
- 100 g of spinach
- 100 g of grated pecorino cheese
- 2 eggs
- 200 g of flour
- 200 ml of milk
- salt and pepper to taste

Method
- Prepare the ricotta: mix the ricotta with the eggs, milk, salt, and pepper.
- Prepare the vegetables: dice the pumpkin, potatoes, onion, and zucchini.
- Add the vegetables: in a pan, sauté the vegetables with olive oil and season with salt.
- Mix: mix the sautéed vegetables with the prepared ricotta.
- Form the sformato: pour the mixture into a baking dish and cover with flour.
- Cook: cook over medium heat for about 40 minutes, checking occasionally.
- Serve: serve hot with a sprinkle of grated pecorino cheese on the side.
