Ingredients

  • 300 g of fresh raspberries
  • 100 g of sugar
  • 1 lemon
  • 1 tablespoon of water
  • 1 tablespoon of powdered sugar
  • 1 tablespoon of flour
  • 1 teaspoon of water
  • 1 teaspoon of lemon juice
  • 1 tablespoon of butter
  • 1 tablespoon of fresh cream
  • 1 tablespoon of icing sugar

Method

  1. Wash the raspberries and trim the tips.
  2. In a pan, mix the sugar, water, and lemon juice. Bring to a boil.
  3. Add the raspberries and cook for 5 minutes.
  4. In another pot, mix the flour, powdered sugar, and water.
  5. Bring to a boil and add the lemon juice.
  6. Stir the raspberry compote and the flour mixture for 2 minutes.
  7. In a bowl, place the raspberry compote and whip the butter with the fresh cream and icing sugar.
  8. Layer the cream on top of the compote and serve.

Rote Grütze has historical roots in Northern Germany, where it has been prepared for generations as an autumn dessert.
