Pumpkin Tortelli

A delicious autumn treat, pumpkin tortelli are a specialty of the Valle d'Aosta, rich in flavor and soft.

Ingredients
- 500g of flour
- 300g of pumpkin, cut into pieces
- 2 eggs
- 100g of butter
- 100g of Grana d'Aosta cheese
- 1 tablespoon of sugar
- 1/2 teaspoon of cinnamon powder
- salt to taste
Method
- Cut the pumpkin into pieces and cook it slowly with butter until it is soft.
- Season the pumpkin and let it release its liquid for about 30 minutes.
- Mix the liquid with the flour and add the eggs. Mix until you get a smooth dough.
- Place the dough between two sheets of kitchen paper and cut with a pasta cutter.
- On another surface, mix a small amount of sugar, cinnamon, and salt. Add the Grana d'Aosta and mix.
- Prepare the tortelli by placing a small amount of pumpkin filling in the center of the dough and sealing it into a tortell shape.
- Fry the tortelli in a pan with a little butter until they are golden.
- Serve them hot with a bit of butter and Grana d'Aosta on the side.
