A classic of Puebla's popular cuisine, cemitas are a tostada of bread filled with a rich array of ingredients.

Ingredients
- 4 toasted bread rounds
- 100 g of ground pork
- 50 g of sliced ham
- 50 g of crumbled feta cheese
- 1 diced onion
- 1 diced tomato
- 1 tablespoon of red sauce
- 1 tablespoon of olive oil
- 1 tablespoon of soy sauce
- Salt and pepper to taste
- Fried potatoes for serving
- Chimichurri sauce for serving
Method
- In a pan, sauté the minced pork with finely chopped garlic, then add the onions and continue cooking over medium heat until the pork is well cooked.
- In a bowl, mix the diced tomato, garlic, red sauce, olive oil, soy sauce, salt, and pepper.
- In a pan, sauté the finely chopped onion with olive oil. Add the diced tomato and cook over medium heat until the tomato is soft.
- Place a toasted bread round on each plate, then add a spoonful of soy sauce and a bit of salt and pepper.
- Over the soy sauce, add a spoonful of red sauce, slices of ham, cooked pork, and crumbled feta cheese.
- Finally, add the sautéed tomato on top of the other ingredients, garnishing with fried potatoes and chimichurri.

Cemitas have origins in the Puebla region, where they have been prepared for generations as a complete meal, featuring local and traditional ingredients.
