Prawns on the Barbie (Variation 2)
A classic Australian dish, these barbecued prawns are crispy and delicious.

Ingredients
- 200 g of fresh prawns
- 1 tablespoon of olive oil
- 1 tablespoon of lemon juice
- 1 tablespoon of soy sauce
- 1 tablespoon of sugar
- 1 tablespoon of black pepper
- 1 red onion, finely chopped
- 1 tablespoon of chili extract
- salt to taste
- 1 bay leaf
- 1 tablespoon of fresh thyme, chopped
- 1 tablespoon of chopped parsley
Method
- Rinse the prawns and pat them dry.
- In a bowl, mix the olive oil, lemon juice, soy sauce, sugar, black pepper, finely chopped red onion, chili extract, salt, bay leaf, thyme, and parsley.
- Add the prawns to the marinade and mix well to ensure they absorb all the flavors.
- Let the prawns marinate for at least 30 minutes.
- Preheat the barbecue and let it warm up.
- Grill the prawns for 2-3 minutes on each side, or until they are crispy and dark red.
- Serve immediately with a drizzle of soy sauce.
The story
Barbecued prawns became popular in the 1970s when outdoor barbecuing became trendy. In Australia, they are often said to be 'on the barbie', a colloquial term for barbecued food.
