Prawns on the Barbie (Variation 2)

A classic Australian dish, these barbecued prawns are crispy and delicious.

Ingredients

  • 200 g of fresh prawns
  • 1 tablespoon of olive oil
  • 1 tablespoon of lemon juice
  • 1 tablespoon of soy sauce
  • 1 tablespoon of sugar
  • 1 tablespoon of black pepper
  • 1 red onion, finely chopped
  • 1 tablespoon of chili extract
  • salt to taste
  • 1 bay leaf
  • 1 tablespoon of fresh thyme, chopped
  • 1 tablespoon of chopped parsley

Method

  1. Rinse the prawns and pat them dry.
  2. In a bowl, mix the olive oil, lemon juice, soy sauce, sugar, black pepper, finely chopped red onion, chili extract, salt, bay leaf, thyme, and parsley.
  3. Add the prawns to the marinade and mix well to ensure they absorb all the flavors.
  4. Let the prawns marinate for at least 30 minutes.
  5. Preheat the barbecue and let it warm up.
  6. Grill the prawns for 2-3 minutes on each side, or until they are crispy and dark red.
  7. Serve immediately with a drizzle of soy sauce.

The story

Barbecued prawns became popular in the 1970s when outdoor barbecuing became trendy. In Australia, they are often said to be 'on the barbie', a colloquial term for barbecued food.
