Ingredients

  • 400g fresh prawns
  • 100g marinated tomatoes
  • 2 cloves of finely chopped garlic
  • 100ml cocktail sauce
  • 50ml water
  • 1 tablespoon sugar
  • 1 tablespoon ketchup
  • 1 tablespoon soy sauce
  • 1 tablespoon black pepper
  • 1 tablespoon salt
  • 200g sweet potatoes, sliced
  • 2 tablespoons olive oil

Method

  1. Clean the prawns and boil the sweet potato slices in salted water for 10-15 minutes until tender.
  2. In a pan, mix the cocktail sauce, water, sugar, ketchup, soy sauce, black pepper, and salt to prepare the sauce.
  3. In a baking dish, add the finely chopped garlic and olive oil, then sauté on medium heat for 5 minutes.
  4. Add the marinated tomatoes and sauté for another 5 minutes.
  5. Sauté the prawns in a pan with a bit of olive oil and season with the prepared cocktail sauce.
  6. Arrange the prawns on a serving plate, top with the tomato and garlic sauce, and serve immediately.

The story

Prawn cocktail gained popularity in Australia in the 1950s, inspired by English seafood cocktails, and took its name from a famous Sydney bar, the 'Cocktail Bar'.
