Pounded Yam with Egusi Soup

A delicious egusi soup served with pounded yam, a traditional and hearty meal.

Ingredients
- 400g of yam
- 200g of melon seeds
- 2 onions
- 2 garlic cloves
- 250ml of water
- 100ml of palm oil
- Salt and pepper to taste
- 1 tablespoon of ground ginger
- 1 tablespoon of nutmeg
- 1 tablespoon of coriander
- 300ml of chicken broth
Method
- Peel the yam, grate it, and pound it until you get a soft paste.
- Boil the yam paste for 15-20 minutes, then drain and let it cool.
- In a pot, sauté the onions and garlic in palm oil.
- Add the melon seeds, ground ginger, nutmeg, and coriander, and cook for 5 minutes.
- Add the water, chicken broth, and salt, bringing to a boil.
- Add the yam paste and cook for an additional 10-15 minutes.
- Serve hot with the Pounded Yam.
