  • 400 g of sweet potatoes
  • 200 g of pumpkins
  • 300 g of flour
  • 2 eggs
  • 1 tablespoon of salt
  • 2 tablespoons of butter
  • 100 ml of legume broth
  • Balsamic vinegar for serving

Method

  1. Prepare the pumpkin by slicing it into thin rounds, then cook it in salted water and drain.
  2. Peel and cut the sweet potatoes into cubes, then cook them in salted water and drain.
  3. Place the potatoes and pumpkin in a bowl, add the eggs and salt, then mix well.
  4. Gradually add the flour by hand until a dough forms, then knead the dough with your hands until it is smooth and homogeneous.
  5. Divide the dough into pieces and form small gnocchi, then cook them in boiling water for 2-3 minutes.
  6. In a pan, melt the butter and add the legume broth, then cook the gnocchi for 2-3 minutes.
  7. Serve the hot gnocchi with a drizzle of balsamic vinegar.
